Instructions
- 1. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
- 2. In a separate bowl, whisk the milk, vanilla, eggs, and coconut oil, then combine with the dry ingredients and stir in the coconut and raspberries.
- 3. Pour the batter into a hot waffle iron and cook according to the manufacturer's instructions, keeping the waffles warm in an oven.
- 4. For the coconut whipped cream, scoop the thick layer of coconut milk into a mixer, discard the water, and whip until creamy, then add powdered sugar and vanilla.
