Instructions
- Beat aquafaba and coconut palm sugar in a mixing bowl until stiff peaks form.
- Fold in chia seeds, vanilla, coconut oil, and plant-based milk.
- Mix in coconut flour, whole wheat flour, baking powder, and salt until just combined.
- Gently stir in shredded coconut, dried cherries, and dark chocolate chips.
- Preheat waffle iron and spray with non-stick cooking spray.
- Pour about 2/3 cup of batter onto the hot waffle iron and cook until golden brown.
- Carefully remove the waffle and repeat with the remaining batter.
