Ingredients

The batter

  • ½ cup aquafaba
  • ¼ cup coconut palm sugar
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla
  • 3 tablespoons coconut oil
  • 1 ¼ cups plant-based milk
  • ½ cup coconut flour
  • ½ cup whole wheat flour
  • ½ tablespoon baking powder
  • a pinch salt

The mix-ins

  • ¼ cup shredded coconut
  • cup dried cherries
  • cup dark chocolate chips

Instructions

  1. Beat aquafaba and coconut palm sugar in a mixing bowl until stiff peaks form.
  2. Fold in chia seeds, vanilla, coconut oil, and plant-based milk.
  3. Mix in coconut flour, whole wheat flour, baking powder, and salt until just combined.
  4. Gently stir in shredded coconut, dried cherries, and dark chocolate chips.
  5. Preheat waffle iron and spray with non-stick cooking spray.
  6. Pour about 2/3 cup of batter onto the hot waffle iron and cook until golden brown.
  7. Carefully remove the waffle and repeat with the remaining batter.
