Ingredients

The salad

  • 3 whole Persian cucumbers, sliced
  • ¼ whole red onion, sliced thinly
  • 2 medium tomatoes, sliced into wedges

The dressing

  • ¼ cup red wine vinegar or apple cider vinegar
  • 2 tbsp extra virgin olive oil
  • 1 ½ tsp organic cane sugar
  • ½ tsp fine sea salt
  • to taste freshly ground black pepper
  • 1-2 tbsp finely chopped herbs (optional: basil, parsley, or mint)

Instructions

  1. Combine the cucumber, onion, tomatoes, and optional herbs in a mixing bowl.
  2. In a separate bowl, whisk together the vinegar, olive oil, sugar, salt, and pepper.
  3. Pour the dressing over the vegetables and toss to combine.
  4. Season with additional salt and pepper to taste and refrigerate until ready to serve.
