Ingredients

Cheese and Accompaniments

  • 3-4 wheels cheese (1 hard, 1 soft, 1 funky)
  • to taste honey and/or honeycomb
  • 1 loaf grilled bread or assorted crackers
  • to taste salami
  • to taste fresh berries and figs
  • to taste stone fruits
  • to taste green olives
  • to taste marcona almonds, walnuts, or pistachios

Grilled Prosciutto Wrapped Mozzarella

  • 6 ounces fresh mozzarella (cut into 1 inch cubes)
  • 4 ounces thinly sliced prosciutto
  • to taste kosher salt
  • to taste pepper

Instructions

  1. Remove cheese from the fridge 1 hour before serving to reach room temperature.
  2. Arrange the cheese on a large platter or cutting board and drizzle the funky cheese with honey.
  3. Surround the cheese with grilled bread, salami, and the grilled prosciutto wrapped mozzarella.
  4. Fill the board with fresh berries, stone fruits, figs, and green olives.
  5. Finish by sprinkling nuts around the cheese.
  6. For the grilled prosciutto wrapped mozzarella, preheat the grill to medium-high and oil the grate.
  7. Wrap each mozzarella piece in prosciutto and grill for 2-3 minutes on each side, then sprinkle with salt and pepper.
