Ingredients

Pickled Balsamic Strawberries

  • 12 ounces fresh strawberries, halved
  • 1 small handful fresh thyme
  • 1 small handful fresh basil
  • 1 cup white balsamic vinegar
  • 2 tablespoons honey or coconut sugar
  • 2 tablespoons additional honey or coconut sugar (optional)
  • 1 vanilla bean seeds removed

Burst Cherry Tomatoes

  • 2 pints heirloom cherry tomatoes
  • 2 tablespoons olive oil
  • ½ cup fresh herbs (basil, oregano, dill)
  • 4 cloves garlic, minced or grated
  • to taste salt and pepper

Cheeseboard

  • 1 ounce brie cheese
  • 1 ounce gorgonzola or blue cheese
  • 8 ounces manchego cheese
  • 1 ounce herb rolled goat cheese
  • 8 ounces fresh burrata cheese
  • to drizzle olive oil for burrata
  • to taste fresh rosemary for burrata
  • 6-8 ounces fresh salami or prosciutto
  • to drizzle honey for drizzling
  • to serve green olives
  • to serve grilled peaches, nectarines, or apricots
  • to serve fresh figs, halved
  • to serve fresh grapes or cherries
  • to serve spicy fruit or pepper jellies
  • to serve toasted walnuts
  • to serve toasted bread or crackers

Instructions

  1. Prepare the pickled strawberries by combining strawberries, basil, and thyme in a jar, whisk together white balsamic, honey, and vanilla bean seeds, pour over strawberries, seal, and refrigerate.
  2. For the burst cherry tomatoes, preheat the oven to 400°F, mix tomatoes with olive oil, herbs, garlic, salt, and pepper in a baking dish, and roast for 10-15 minutes until collapsed.
  3. Assemble the cheeseboard by placing cheeses on a large plate or board, arranging fruits, spreads, nuts, olives, and bread around the cheese.
  4. Drizzle blue cheese with honey, drizzle burrata with olive oil and garnish with rosemary, and top grilled brie with pickled strawberries.
