Creamy Salmon Orzo Skillet

Instructions
- 1. Heat a skillet over medium-high heat and add olive oil.
- 2. Once hot, add the salmon and cook for 6-7 minutes on one side, then flip and cook for 4-5 minutes until cooked through. Remove salmon and set aside.
- 3. In the same skillet, add minced garlic and dry orzo, mixing for one minute to toast.
- 4. Pour in chicken stock, dill, and salt, whisking to scrape brown bits. Cook for 5 minutes, stirring occasionally.
- 5. Add cherry tomatoes and asparagus, cooking for another 5 minutes while stirring.
- 6. Stir in lemon juice, milk, and parmesan cheese, cooking for 3-4 minutes until the orzo absorbs most of the liquid.
- 7. Nestle the salmon back into the skillet and heat through for about 2 minutes.
- 8. Turn off heat and top with extra parmesan and dill before serving.
