Creamy Salmon Orzo Skillet

Ingredients

  • 2 tbsp olive oil
  • 4 fillets salmon
  • 3 cloves garlic, minced
  • 1 cup orzo
  • 2 cups chicken stock
  • 2 tbsp fresh dill, chopped
  • ½ tsp salt
  • 1 cup cherry tomatoes, sliced
  • 1 cup asparagus, chopped
  • ½ lemon juiced
  • ½ cup milk
  • ½ cup parmesan cheese
  • to taste extra dill and parmesan for topping

Instructions

  1. 1. Heat a skillet over medium-high heat and add olive oil.
  2. 2. Once hot, add the salmon and cook for 6-7 minutes on one side, then flip and cook for 4-5 minutes until cooked through. Remove salmon and set aside.
  3. 3. In the same skillet, add minced garlic and dry orzo, mixing for one minute to toast.
  4. 4. Pour in chicken stock, dill, and salt, whisking to scrape brown bits. Cook for 5 minutes, stirring occasionally.
  5. 5. Add cherry tomatoes and asparagus, cooking for another 5 minutes while stirring.
  6. 6. Stir in lemon juice, milk, and parmesan cheese, cooking for 3-4 minutes until the orzo absorbs most of the liquid.
  7. 7. Nestle the salmon back into the skillet and heat through for about 2 minutes.
  8. 8. Turn off heat and top with extra parmesan and dill before serving.
