Grilled Salmon with Avocado Greek Salsa and Orzo

Ingredients

The orzo

  • 1 cup dry orzo

The salmon

  • 4 (6 oz) skinless salmon fillets
  • 3 Tbsp olive oil
  • to taste salt
  • to taste freshly ground black pepper

The salsa

  • 2 small Roma tomatoes, diced
  • ½ cucumber, peeled and chopped
  • cup chopped red onions
  • cup chopped kalamata olives
  • 2 cloves garlic, minced
  • 1 medium avocado, peeled and diced
  • ½ (2.5 oz) crumbled feta
  • 2 Tbsp fresh lemon juice
  • 3 Tbsp finely minced fresh parsley
  • 1 Tbsp finely minced fresh oregano

Instructions

  1. 1. Prepare the orzo according to package directions, then drain and toss with a little olive oil.
  2. 2. Preheat the grill to medium-high heat (about 400 degrees).
  3. 3. Brush both sides of the salmon fillets with 1 Tbsp of olive oil and season with salt and pepper.
  4. 4. Brush the grill grates lightly with olive oil and place the salmon on the grill. Cook for about 3 minutes per side until cooked through.
  5. 5. In a mixing bowl, combine the tomatoes, cucumber, red onions, kalamata olives, garlic, avocado, feta, lemon juice, 2 Tbsp olive oil, parsley, and oregano. Season with salt to taste.
  6. 6. Divide the drained orzo among plates, add a salmon fillet to each, and top with the salsa. Serve immediately.
