Grilled Salmon with Avocado Greek Salsa and Orzo

Instructions
- 1. Prepare the orzo according to package directions, then drain and toss with a little olive oil.
- 2. Preheat the grill to medium-high heat (about 400 degrees).
- 3. Brush both sides of the salmon fillets with 1 Tbsp of olive oil and season with salt and pepper.
- 4. Brush the grill grates lightly with olive oil and place the salmon on the grill. Cook for about 3 minutes per side until cooked through.
- 5. In a mixing bowl, combine the tomatoes, cucumber, red onions, kalamata olives, garlic, avocado, feta, lemon juice, 2 Tbsp olive oil, parsley, and oregano. Season with salt to taste.
- 6. Divide the drained orzo among plates, add a salmon fillet to each, and top with the salsa. Serve immediately.
