Cajun Salmon Orzo

The cooking fats
Instructions
- Prepare the salmon by removing the skin and cutting it into 1-inch cubes. Season with Cajun seasoning, garlic powder, and black pepper.
- Heat 2 tbsp of butter in a skillet over medium heat and cook the salmon for 4 minutes, flipping continuously. Remove the salmon from the skillet.
- In the same skillet, add 1 tbsp of butter and sauté the onion, green bell pepper, celery, parsley, and minced garlic for 5 minutes.
- Add the orzo to the skillet and stir for 1 minute. Then add Cajun seasoning, black pepper, garlic powder, sage, smoked paprika, sea salt, white wine, and hot sauce. Mix and cook for 3 more minutes.
- Pour in the seafood stock, bring to a slight boil, then lower the heat and cover. Cook for 10 to 12 minutes.
- Remove from heat and stir in heavy cream and parmesan cheese. Finally, fold in the cooked salmon.
