Cajun Salmon Orzo

Ingredients

The salmon

  • lb salmon filet
  • tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp black pepper

The aromatics

  • ½ cup onion, chopped
  • ½ cup green bell pepper, chopped
  • cup celery, chopped
  • cup fresh parsley, finely chopped
  • 3 tbsp minced garlic

The pasta and sauce

  • cup orzo pasta
  • 1 tsp sage
  • 1 tsp smoked paprika
  • 1 tsp sea salt
  • ¼ cup Riesling white wine
  • 1 tbsp Louisiana hot sauce
  • 2 cups seafood stock
  • ¼ cup heavy cream
  • 1 cup grated parmesan cheese

The cooking fats

  • 3 tbsp butter

Instructions

  1. Prepare the salmon by removing the skin and cutting it into 1-inch cubes. Season with Cajun seasoning, garlic powder, and black pepper.
  2. Heat 2 tbsp of butter in a skillet over medium heat and cook the salmon for 4 minutes, flipping continuously. Remove the salmon from the skillet.
  3. In the same skillet, add 1 tbsp of butter and sauté the onion, green bell pepper, celery, parsley, and minced garlic for 5 minutes.
  4. Add the orzo to the skillet and stir for 1 minute. Then add Cajun seasoning, black pepper, garlic powder, sage, smoked paprika, sea salt, white wine, and hot sauce. Mix and cook for 3 more minutes.
  5. Pour in the seafood stock, bring to a slight boil, then lower the heat and cover. Cook for 10 to 12 minutes.
  6. Remove from heat and stir in heavy cream and parmesan cheese. Finally, fold in the cooked salmon.
