Ingredients

Cajun Seasoning

  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika
  • tsp sea salt
  • tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp onion powder
  • ½ tsp cayenne pepper (optional)

Main Ingredients

  • 12 oz pasta of choice
  • 2 tbsp avocado oil (divided)
  • 4 fillets salmon
  • ½ onion diced
  • 3 cloves garlic (minced)
  • 1 tbsp tomato paste
  • 1 cup coconut milk
  • ½ cup grated parmesan (optional)
  • 3 cups spinach
  • to taste chopped fresh parsley (optional topping)

Instructions

  1. 1. Combine all seasoning ingredients to make the cajun seasoning.
  2. 2. Cook the pasta according to package instructions, then drain and set aside.
  3. 3. Season the salmon with 1 tbsp of cajun seasoning.
  4. 4. Heat avocado oil in a large skillet over medium heat, then cook the salmon for 4 minutes on one side and 3-4 minutes on the other until fully cooked. Remove and set aside.
  5. 5. In the same skillet, add more avocado oil, onion, and garlic. Cook for 3-4 minutes while stirring.
  6. 6. Add coconut milk and tomato paste to deglaze the pan, scraping up any bits.
  7. 7. Stir in the remaining cajun seasoning and parmesan cheese (if using). Simmer on low.
  8. 8. Add spinach and cook until wilted, about 1-2 minutes.
  9. 9. Toss the cooked pasta in the sauce, then nestle the salmon fillets in.
  10. 10. Cover and let the salmon heat through before serving. Garnish with parmesan and parsley if desired.
