Instructions
- 1. Combine all seasoning ingredients to make the cajun seasoning.
- 2. Cook the pasta according to package instructions, then drain and set aside.
- 3. Season the salmon with 1 tbsp of cajun seasoning.
- 4. Heat avocado oil in a large skillet over medium heat, then cook the salmon for 4 minutes on one side and 3-4 minutes on the other until fully cooked. Remove and set aside.
- 5. In the same skillet, add more avocado oil, onion, and garlic. Cook for 3-4 minutes while stirring.
- 6. Add coconut milk and tomato paste to deglaze the pan, scraping up any bits.
- 7. Stir in the remaining cajun seasoning and parmesan cheese (if using). Simmer on low.
- 8. Add spinach and cook until wilted, about 1-2 minutes.
- 9. Toss the cooked pasta in the sauce, then nestle the salmon fillets in.
- 10. Cover and let the salmon heat through before serving. Garnish with parmesan and parsley if desired.
