Ingredients

The pasta

  • 1 lb pasta of choice

The sauce

  • 2 tbs avocado oil
  • 1 tbs diced poblano or ancho pepper
  • 6 oz canned salmon, boneless and skinless
  • 1 cup chopped sun dried tomatoes
  • ¼ cup lemon juice
  • 3 cups baby spinach
  • to taste salt and pepper

Instructions

  1. 1. Boil the pasta according to the package directions and set aside.
  2. 2. In a skillet, heat the oil over medium-low heat and sauté the poblano pepper for a minute.
  3. 3. Add the canned salmon, sun dried tomatoes, cooked pasta, and lemon juice; stir to combine.
  4. 4. Add the spinach and season with salt and pepper.
  5. 5. Turn off the heat and cover the pan for a couple of minutes to wilt the spinach.
  6. 6. Serve warm.
