Instructions
- 1. Boil the pasta according to the package directions and set aside.
- 2. In a skillet, heat the oil over medium-low heat and sauté the poblano pepper for a minute.
- 3. Add the canned salmon, sun dried tomatoes, cooked pasta, and lemon juice; stir to combine.
- 4. Add the spinach and season with salt and pepper.
- 5. Turn off the heat and cover the pan for a couple of minutes to wilt the spinach.
- 6. Serve warm.
