Ingredients

The Salmon Balls

  • 1 lb Fresh Salmon Filet
  • ½ cup Italian Breadcrumbs
  • ½ cup Chopped Celery
  • ½ cup Chopped Green Onion
  • 25 pieces Ritz Crackers
  • 1 Large Organic Egg
  • 2 tsp Creole Seasoning
  • 1 tsp Black Pepper
  • 1 tsp Oregano
  • ½ tsp Garlic Powder
  • ½ tsp Paprika

The Remoulade Sauce

  • ½ cup Mayo
  • 2 tbsp Dill Pickle Relish
  • ½ tsp Lemon Juice
  • ¼ tsp Creole Seasoning
  • ¼ tsp Garlic Powder
  • ¼ tsp Paprika
  • ½ tsp Ketchup
  • ½ tsp Louisiana Hot Sauce
  • ¼ tsp White Ground Pepper
  • ½ tsp Horseradish Sauce
  • ¼ tsp French Recipe Dijon Mustard
  • Dash Red Cayenne Pepper

Instructions

  1. Chop celery and green onions, then place them in a large bowl.
  2. Remove the skin from the salmon and chop it into small pieces, adding it to the bowl with celery and green onions.
  3. Add breadcrumbs, seasonings, and a slightly scrambled egg to the bowl, then mix everything together.
  4. Cover the mixture and refrigerate for 30 minutes.
  5. Form the chilled mixture into flattened balls.
  6. Crush Ritz crackers in a zip lock bag and dredge the salmon balls in the crushed crackers.
  7. Heat oil in a pan over medium heat and fry the salmon balls for 3 minutes on each side.
  8. Remove from heat and place on paper towels to absorb excess oil.
  9. For the remoulade sauce, whisk all sauce ingredients together until smooth and serve immediately.
