Instructions
- Chop celery and green onions, then place them in a large bowl.
- Remove the skin from the salmon and chop it into small pieces, adding it to the bowl with celery and green onions.
- Add breadcrumbs, seasonings, and a slightly scrambled egg to the bowl, then mix everything together.
- Cover the mixture and refrigerate for 30 minutes.
- Form the chilled mixture into flattened balls.
- Crush Ritz crackers in a zip lock bag and dredge the salmon balls in the crushed crackers.
- Heat oil in a pan over medium heat and fry the salmon balls for 3 minutes on each side.
- Remove from heat and place on paper towels to absorb excess oil.
- For the remoulade sauce, whisk all sauce ingredients together until smooth and serve immediately.
