Salmon Croquettes with Dill Sauce

The sauce

The salmon mixture

unsalted salmon, packed in water (7.5 ounces each)

Instructions
- Combine the dill sauce ingredients and set aside.
- Drain the salmon, remove and discard the skin and bones.
- In a medium bowl, mix the salmon with celery, onion, egg, salt, and black pepper.
- Form the mixture into 8 delicate patties.
- Heat a large skillet and add the olive oil.
- Cook the patties until browned on each side, about 5 minutes per side.
- Serve each patty with a dollop of the dill sauce.
