Ingredients

The sauce

  • cups plain yogurt or light sour cream
  • ¼ cup Dijon mustard
  • 6 sprigs fresh dill, chopped

The salmon mixture

  • 4 cans unsalted salmon, packed in water (7.5 ounces each)
  • 4 stalks celery, finely chopped
  • 1 large white onion, finely chopped
  • 4 large eggs, beaten
  • ½ tablespoon salt
  • to taste black pepper
  • 1 tablespoon olive oil

Instructions

  1. Combine the dill sauce ingredients and set aside.
  2. Drain the salmon, remove and discard the skin and bones.
  3. In a medium bowl, mix the salmon with celery, onion, egg, salt, and black pepper.
  4. Form the mixture into 8 delicate patties.
  5. Heat a large skillet and add the olive oil.
  6. Cook the patties until browned on each side, about 5 minutes per side.
  7. Serve each patty with a dollop of the dill sauce.
