Instructions
- Preheat the oven to 400°F.
- Season the chicken on both sides with salt and pepper.
- In a shallow baking dish, whisk together the white wine, olive oil, half of the cheese, garlic, and shallot.
- Add the thyme sprigs and chicken to the dish, tossing to coat.
- Arrange the chicken skin-side up and sprinkle with the remaining cheese.
- Bake for 45 minutes to 1 hour, or until the chicken is cooked through and the skin is crispy.
