Roast Chicken Legs with White Wine & Parmesan

Ingredients

The chicken

  • 2 pieces chicken drumsticks
  • 2 pieces chicken thighs
  • to taste kosher salt
  • to taste freshly cracked pepper

The sauce

  • cup white wine
  • cup olive oil
  • cup freshly grated Parmigiano Reggiano
  • 2–3 cloves garlic, minced
  • 1 piece shallot, thinly sliced
  • a few sprigs fresh thyme

Instructions

  1. Preheat the oven to 400°F.
  2. Season the chicken on both sides with salt and pepper.
  3. In a shallow baking dish, whisk together the white wine, olive oil, half of the cheese, garlic, and shallot.
  4. Add the thyme sprigs and chicken to the dish, tossing to coat.
  5. Arrange the chicken skin-side up and sprinkle with the remaining cheese.
  6. Bake for 45 minutes to 1 hour, or until the chicken is cooked through and the skin is crispy.
