Instructions
- Prepare the chicken adobo by combining soy sauce, vinegar, brown sugar, minced garlic, water, bay leaves, and black pepper in a pot.
- Add the chicken thighs to the pot and bring to a boil, then reduce heat and simmer for about 30 minutes.
- Meanwhile, cook the yellow jasmine rice by rinsing it and boiling it with water until tender.
- For the garlic sautéed kale, sauté minced garlic in olive oil, add the kale, and cook until wilted.
- Assemble the meal prep containers with chicken adobo, rice, and sautéed kale.
