Ingredients

The Chicken Adobo

  • 1 lb chicken thighs
  • ½ cup soy sauce
  • ¼ cup white vinegar
  • 1 tbsp brown sugar
  • 1 tbsp garlic, minced
  • 2 cups water
  • 2 bay leaves bay leaves
  • ½ tsp black pepper

The Yellow Jasmine Rice

  • 1 cup yellow jasmine rice
  • 2 cups water

The Garlic Sautéed Kale

  • 1 bunch kale
  • 2 cloves garlic
  • 1 tbsp olive oil
  • to taste salt

Instructions

  1. Prepare the chicken adobo by combining soy sauce, vinegar, brown sugar, minced garlic, water, bay leaves, and black pepper in a pot.
  2. Add the chicken thighs to the pot and bring to a boil, then reduce heat and simmer for about 30 minutes.
  3. Meanwhile, cook the yellow jasmine rice by rinsing it and boiling it with water until tender.
  4. For the garlic sautéed kale, sauté minced garlic in olive oil, add the kale, and cook until wilted.
  5. Assemble the meal prep containers with chicken adobo, rice, and sautéed kale.
