Cream of Buckwheat

Ingredients

The base

  • 1 cup buckwheat groats
  • 2 cups coconut milk
  • 2 cups water

The flavoring

  • ¼ tsp sea salt
  • 12 drops vanilla liquid stevia
  • 2 tbsp ghee or coconut oil

Instructions

  1. Grind 1 cup of buckwheat groats in a blender until finely ground.
  2. In a medium pot, combine 2 cups of coconut milk and 2 cups of water, and bring to a simmer.
  3. Whisk in the ground buckwheat and continue whisking until the porridge thickens.
  4. Remove from heat and stir in ¼ tsp sea salt, 12 drops of vanilla liquid stevia, and 2 tbsp of ghee or coconut oil.
