BBQ Chicken Drumsticks and Thighs

Ingredients

The chicken

  • 5-6 pounds chicken thighs and drumsticks

The marinade and seasoning

  • ½ cup soy sauce
  • 1 tablespoon brown sugar or sweetener
  • 2 teaspoons chili powder
  • 2 teaspoons smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • to taste salt and pepper

The BBQ sauce

  • optional BBQ sauce

Instructions

  1. If marinating, combine soy sauce and spices, drizzle over chicken, and refrigerate for 30 minutes to overnight.
  2. If not marinating, sprinkle spices on both sides of the chicken and rub in.
  3. Preheat the grill to medium-high heat (375-400°F) and ensure the grates are clean and oiled.
  4. Place the seasoned chicken on the grill.
  5. Grill drumsticks for 10-15 minutes on each side, bone-in thighs for 7-10 minutes on each side, and boneless thighs for 5-7 minutes on each side.
  6. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F.
  7. Brush BBQ sauce on the chicken during the last few minutes of cooking and grill for an additional 2-3 minutes.
  8. Remove chicken from heat and let it rest for at least 15 minutes before serving.
