Zesty Chimichurri Burgers

Instructions
- Preheat the grill to medium-high heat, around 375-400°F.
- In a food processor, combine garlic, cilantro, red wine vinegar, lime juice, olive oil, smoked paprika, red pepper flakes, and salt and pepper. Blend until the mixture forms a sauce and set aside.
- Season both sides of the beef patties with salt and pepper.
- Brush the poblano pepper and onion slices with canola oil and grill them until charred, about 3-4 minutes per side. Remove from the grill and let the poblano sit wrapped for 5 minutes before peeling off the skin and slicing.
- Grill the beef patties for 3-4 minutes on each side until cooked to your preference.
- Toast the wheat buns on the grill for about 2 minutes on each side.
- Assemble the burgers starting with the bottom bun, followed by sliced tomatoes, the beef patty, grilled onions, poblano peppers, sliced avocado, and a drizzle of chimichurri sauce. Top with the top bun.
- Serve and enjoy!
