Ingredients

The Burgers

  • 4 patties lean 90/10 ground beef
  • to taste salt & pepper
  • 4 whole wheat buns whole wheat buns
  • 1 large tomato, sliced
  • 1 poblano pepper roasted and sliced
  • 1 sweet onion sliced into ½ inch slices
  • 1 tablespoon canola oil
  • 2 avocados avocados

Chimichurri Sauce

  • 1 clove garlic
  • 1 cup fresh cilantro
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lime juice
  • 3 tablespoons olive oil
  • ¼ teaspoon smoked paprika
  • ½ teaspoon red pepper flakes
  • to taste salt & pepper

Instructions

  1. Preheat the grill to medium-high heat, around 375-400°F.
  2. In a food processor, combine garlic, cilantro, red wine vinegar, lime juice, olive oil, smoked paprika, red pepper flakes, and salt and pepper. Blend until the mixture forms a sauce and set aside.
  3. Season both sides of the beef patties with salt and pepper.
  4. Brush the poblano pepper and onion slices with canola oil and grill them until charred, about 3-4 minutes per side. Remove from the grill and let the poblano sit wrapped for 5 minutes before peeling off the skin and slicing.
  5. Grill the beef patties for 3-4 minutes on each side until cooked to your preference.
  6. Toast the wheat buns on the grill for about 2 minutes on each side.
  7. Assemble the burgers starting with the bottom bun, followed by sliced tomatoes, the beef patty, grilled onions, poblano peppers, sliced avocado, and a drizzle of chimichurri sauce. Top with the top bun.
  8. Serve and enjoy!
