Ingredients

  • 4 oz green chilies
  • cups milk
  • ½ cup half and half
  • ¼ cup finely chopped cilantro
  • ½ teaspoon cumin
  • ¼ teaspoon chili powder
  • salt and pepper to taste

The Burgers

  • 1 pound 80/20 ground chuck beef
  • 1 teaspoon liquid smoke
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon olive oil
  • 1 teaspoon brown sugar or sweetener
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 2 teaspoons dried minced onions
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon cayenne pepper (optional)
  • 4 buns brioche buns

Instructions

  1. Prepare the queso dip by mixing shredded cheeses with cornstarch and setting aside.
  2. In a saucepan, melt butter and sauté onions and garlic until translucent.
  3. Add remaining queso ingredients and stir continuously until cheese melts and dip thickens.
  4. For the burgers, season ground beef with liquid smoke, Worcestershire sauce, and burger seasoning.
  5. Form the beef into 4 patties without overworking the meat.
  6. Cook the patties in an air fryer or on a grill, ensuring they reach the desired doneness.
  7. Serve the burgers on brioche buns topped with the queso dip.
