Instructions
- Make the spice blend by whisking together the smoked paprika, garlic powder, sea salt, ancho chili powder, ground cumin, and black pepper.
- Season one side of each burger patty with the spice blend and let sit.
- Prepare the spicy mayo by mixing mayo, chipotle pepper, smoked paprika, garlic powder, and lime juice in a bowl until well combined.
- For the avocado mash, mash the avocados in a bowl and mix in lime juice, garlic powder, and salt until smooth.
- Preheat the grill to medium-high heat.
- Grill whole peppers for 3-4 minutes on each side until slightly charred, then let sit, remove seeds, and dice.
- Combine diced peppers, pineapple, cilantro, lime juice, and salt in a bowl for the relish.
- Grill the seasoned burger patties for 4-5 minutes on each side, then toast the buns.
- Assemble the burger with the bottom bun, spicy mayo, burger patty, avocado mash, pineapple pepper relish, and top bun.
