Avocado, Corn & Black Bean Burger Patties

Ingredients

  • 1 tbsp ground flax
  • 3 tbsp water
  • 1 15oz can black beans
  • ½ medium ripe avocado
  • 2 tsp lemon juice
  • ½ cup corn
  • ½ cup chopped cilantro
  • cup chopped onion
  • ¾ cup oat flour
  • 2 tbsp nutritional yeast
  • 1 tsp cumin
  • ½ tsp salt
  • ½ tsp garlic powder
  • ½ tsp chili powder
  • ½ tsp smoked paprika
  • ¼ tsp cayenne pepper

Instructions

  1. Preheat the oven to 375°F.
  2. Mix ground flax and water in a small bowl and set aside to thicken.
  3. In a large bowl, mash the black beans and avocado together, leaving some beans whole.
  4. Add the remaining ingredients to the bean mixture and stir to combine.
  5. Line a baking sheet with parchment paper and spray with cooking spray.
  6. Form the mixture into four patties and place them on the baking sheet.
  7. Bake for 40 minutes, flipping the patties halfway through.
  8. Serve with your favorite burger toppings.
