Mexican Street Corn Fritters

Instructions
- Mix ground turkey or chicken with panko, lime juice, garlic, chipotle chiles, brown sugar, oregano, cumin, smoked paprika, salt, and pepper in a bowl, then form into 4 patties and refrigerate.
- Combine flour, baking powder, chili powder, smoked paprika, salt, pepper, and milk in a bowl, then fold in corn, cilantro, and cotija cheese until thick.
- Heat oil in a saucepan and fry spoonfuls of the batter until golden brown, then keep warm in the oven.
- Preheat grill to high heat and grill the burger patties for 4-5 minutes per side, adding cheddar cheese in the last minute.
- Assemble the burgers by spreading mayo on the buns, adding the burger patties, topping with mashed avocado and corn fritters, then add the top bun.
