Ingredients

The Chicken

  • 2–2 ½ lbs chicken breasts or thighs, boneless, skinless

The Seasoning

  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 cup water
  • 1 teaspoon granulated garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1 teaspoon chili powder
  • 1 teaspoon cumin

Optional Additions

  • to taste canned green chilies
  • to taste diced onion
  • to taste chopped garlic

Instructions

  1. 1. Place chicken, olive oil, water, salt, and spices in the cooking method of your choice (Instant Pot, Slow Cooker, or stovetop).
  2. 2. For Instant Pot: Pressure cook on high for 9 minutes for large breasts or 12 minutes for thighs. If frozen, add 1-2 minutes. Naturally release for 5 minutes before manually releasing.
  3. 3. Shred the chicken with two forks and return it to the cooking liquid to keep it moist.
  4. 4. For Slow Cooker: Cook on low for 4-6 hours, then shred and return to the liquid.
  5. 5. For Stovetop: Sear the chicken in oil, add water and spices, cover, and simmer for 8-10 minutes until cooked through. Shred and return to the liquid.
