Ingredients

The chicken

  • 1 ½ pounds boneless skinless chicken breasts

The seasoning

  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon Creole seasoning

The cooking base

  • 2 tablespoons olive oil
  • ½ onion sliced
  • 2 teaspoons minced garlic
  • 2 plump roma tomatoes, diced
  • 2 cups chicken broth

Instructions

  1. Pat dry the chicken breasts and season both sides with salt, pepper, and Creole seasoning.
  2. Heat olive oil in a large skillet over medium-high heat and sear the chicken for 2 to 3 minutes on each side.
  3. Add onions, garlic, tomatoes, and chicken broth to the skillet, bring to a boil, then reduce heat to low and cover.
  4. Cook for 20 to 25 minutes, depending on the thickness of the chicken breasts.
  5. Turn off the heat and shred the chicken using two forks or a stand mixer.
  6. If desired, mix in some of the cooking liquid for moisture before storing or serving.
