Instructions
- Pat dry the chicken breasts and season both sides with salt, pepper, and Creole seasoning.
- Heat olive oil in a large skillet over medium-high heat and sear the chicken for 2 to 3 minutes on each side.
- Add onions, garlic, tomatoes, and chicken broth to the skillet, bring to a boil, then reduce heat to low and cover.
- Cook for 20 to 25 minutes, depending on the thickness of the chicken breasts.
- Turn off the heat and shred the chicken using two forks or a stand mixer.
- If desired, mix in some of the cooking liquid for moisture before storing or serving.
