Ingredients

The granola base

  • 2 cups rolled oats
  • 2 cups brown rice crisp cereal
  • 1 cup diced walnuts

The spices

  • 1 tsp cinnamon
  • ¼ tsp salt
  • ¼ tsp ginger
  • tsp nutmeg

The wet ingredients

  • ½ cup melted coconut oil
  • cup maple syrup
  • ¼ cup applesauce

The dried fruit

  • 1 cup chopped dried apples

Instructions

  1. Preheat the oven to 275 degrees.
  2. Mix the oats, rice cereal, and walnuts in a large bowl.
  3. In a small bowl, combine the cinnamon, salt, ginger, and nutmeg, then add to the large bowl.
  4. In another small bowl, mix the melted coconut oil, maple syrup, and applesauce, then pour over the dry ingredients and stir well.
  5. Transfer the mixture to a 9x13 inch baking dish and bake for about an hour until solid.
  6. Remove from the oven and let cool completely before breaking apart.
  7. Add the dried apples to the granola and store in an airtight container.
