Instructions
- Preheat the oven to 350°F and prepare a mini loaf pan with grease and parchment paper.
- In a small bowl, mix together the sugar and cinnamon for the topping.
- In a medium bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice.
- In another bowl, combine the sugar, pumpkin puree, egg, vegetable oil, and milk.
- Mix the dry ingredients into the wet ingredients until just combined, then transfer to the prepared loaf pan.
- Sprinkle the cinnamon sugar topping over the batter.
- Bake for 32 to 38 minutes, or until a toothpick comes out clean.
- Cool in the pan for a bit before transferring to a cooling rack. Let it cool for an additional 10 minutes before serving.
