Pumpkin Bread

  • ½ cup all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • ½ cup granulated sugar
  • ¼ cup pumpkin puree
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 1 tablespoon milk

Instructions

  1. Preheat the oven to 350°F and prepare a mini loaf pan with grease and parchment paper.
  2. In a small bowl, mix together the sugar and cinnamon for the topping.
  3. In a medium bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice.
  4. In another bowl, combine the sugar, pumpkin puree, egg, vegetable oil, and milk.
  5. Mix the dry ingredients into the wet ingredients until just combined, then transfer to the prepared loaf pan.
  6. Sprinkle the cinnamon sugar topping over the batter.
  7. Bake for 32 to 38 minutes, or until a toothpick comes out clean.
  8. Cool in the pan for a bit before transferring to a cooling rack. Let it cool for an additional 10 minutes before serving.
