Ginger, Hibiscus and Minty Watermelon Popsicles

Ingredients

  • ¾ cup water
  • 2 tablespoons dried hibiscus flowers
  • 1 inch fresh ginger, peeled and finely chopped or grated
  • ¼ cup honey
  • ¼ cup fresh mint
  • 4-5 cups fresh watermelon
  • 1 unit juice of lemon

Instructions

  1. Boil water in a medium pot.
  2. Remove from heat and add hibiscus flowers, ginger, honey, and mint leaves.
  3. Cover and steep for 20 minutes.
  4. Strain the mixture into a blender, discarding solids.
  5. Add watermelon and lemon juice to the blender and blend until smooth.
  6. Strain the mixture through a fine mesh strainer or cheesecloth to remove pulp.
  7. Pour the mixture into 8 popsicle molds.
  8. Freeze for 1 hour, then insert popsicle sticks.
  9. Return to the freezer and freeze until firm, about 4 hours.
  10. To remove popsicles, run the mold under hot water for 10 seconds.
