Ginger, Hibiscus and Minty Watermelon Popsicles

Instructions
- Boil water in a medium pot.
- Remove from heat and add hibiscus flowers, ginger, honey, and mint leaves.
- Cover and steep for 20 minutes.
- Strain the mixture into a blender, discarding solids.
- Add watermelon and lemon juice to the blender and blend until smooth.
- Strain the mixture through a fine mesh strainer or cheesecloth to remove pulp.
- Pour the mixture into 8 popsicle molds.
- Freeze for 1 hour, then insert popsicle sticks.
- Return to the freezer and freeze until firm, about 4 hours.
- To remove popsicles, run the mold under hot water for 10 seconds.
