Watermelon Mint Popsicles

The popsicle mixture

Instructions
- Blend the watermelon chunks and lime juice until smooth.
- Strain the mixture through a fine mesh strainer to remove seeds.
- Stir in the finely diced mint leaves.
- Pour the mixture into popsicle molds evenly.
- Freeze for 1 to 2 hours until slightly firm, then insert the popsicle sticks.
- Return to the freezer and freeze until fully firm, about 4 to 6 hours.
- Remove the popsicles from the molds and let them sit at room temperature for 5 minutes before serving.
