Ingredients

The popsicle mixture

  • 6 cups watermelon chunks
  • 3 tablespoons lime juice
  • 20-30 leaves mint leaves, finely diced

For freezing

  • 8 popsicle sticks

Instructions

  1. Blend the watermelon chunks and lime juice until smooth.
  2. Strain the mixture through a fine mesh strainer to remove seeds.
  3. Stir in the finely diced mint leaves.
  4. Pour the mixture into popsicle molds evenly.
  5. Freeze for 1 to 2 hours until slightly firm, then insert the popsicle sticks.
  6. Return to the freezer and freeze until fully firm, about 4 to 6 hours.
  7. Remove the popsicles from the molds and let them sit at room temperature for 5 minutes before serving.
