Ingredients

  • 5 cups seedless watermelon pulp
  • ½ cup sugar
  • ¼ cup mini chocolate chips
  • 1 pint lime sherbet, softened

Instructions

  1. 1. Puree watermelon and sugar until smooth, then strain into a bowl and freeze until slightly slushy.
  2. 2. Stir in chocolate chips.
  3. 3. Place disposable cups in a baking pan and fill with watermelon puree, leaving space at the top.
  4. 4. Freeze for 2 hours until solid but not rock hard.
  5. 5. Spread softened lime sherbet over the frozen puree and smooth it out.
  6. 6. Cover with plastic wrap, cut a slit in the center, and insert popsicle sticks.
  7. 7. Freeze overnight or until solid.
  8. 8. Let sit at room temperature for a minute before removing from cups and serve.
