Watermelon Ice Pops

lime sherbet, softened
Instructions
- 1. Puree watermelon and sugar until smooth, then strain into a bowl and freeze until slightly slushy.
- 2. Stir in chocolate chips.
- 3. Place disposable cups in a baking pan and fill with watermelon puree, leaving space at the top.
- 4. Freeze for 2 hours until solid but not rock hard.
- 5. Spread softened lime sherbet over the frozen puree and smooth it out.
- 6. Cover with plastic wrap, cut a slit in the center, and insert popsicle sticks.
- 7. Freeze overnight or until solid.
- 8. Let sit at room temperature for a minute before removing from cups and serve.
