Gelato Siciliano
Ingredients
The gelato base

The chocolate chips

Instructions
- Simmer 3 cups of whole milk with a vanilla bean.
- In a separate cup, mix 1 cup of sugar with 3 tablespoons and 2 teaspoons of corn starch.
- Remove the milk from heat and stir in the cornstarch mixture while stirring continuously.
- Return the mixture to low-medium heat and stir until it thickens, about 10-12 minutes.
- Strain the mixture into a bowl and let it cool for about 20 minutes.
- Chill the mixture in the fridge for a couple of hours until completely chilled.
- Prepare the ice-cream maker by freezing it overnight.
- Melt a few chunks of bittersweet chocolate in a saucepan over low heat.
- Drizzle the melted chocolate into the churning ice-cream maker once the gelato starts to thicken.
