Ingredients

The gelato base

  • 3 cups whole milk
  • 1 cup sugar
  • 3 tablespoons corn starch
  • 2 teaspoons corn starch
  • 1 bean vanilla

The chocolate chips

  • a few chunks bittersweet chocolate

Instructions

  1. Simmer 3 cups of whole milk with a vanilla bean.
  2. In a separate cup, mix 1 cup of sugar with 3 tablespoons and 2 teaspoons of corn starch.
  3. Remove the milk from heat and stir in the cornstarch mixture while stirring continuously.
  4. Return the mixture to low-medium heat and stir until it thickens, about 10-12 minutes.
  5. Strain the mixture into a bowl and let it cool for about 20 minutes.
  6. Chill the mixture in the fridge for a couple of hours until completely chilled.
  7. Prepare the ice-cream maker by freezing it overnight.
  8. Melt a few chunks of bittersweet chocolate in a saucepan over low heat.
  9. Drizzle the melted chocolate into the churning ice-cream maker once the gelato starts to thicken.
