Ingredients

  • 1 cup unsalted butter at room temperature
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 3.4 oz. Coconut Creme instant pudding mix
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup sweetened shredded coconut
  • 2 cups white chocolate chunks or chips

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet.
  2. Cream together the butter and sugars, then mix in the pudding mix, eggs, and vanilla.
  3. In a separate bowl, whisk together the flour, baking soda, and salt, then combine with the wet ingredients.
  4. Fold in the shredded coconut and white chocolate chunks.
  5. Drop rounded tablespoons of dough onto the baking sheet and bake for 10-12 minutes.
  6. Allow cookies to cool on the baking sheet for 2 minutes before transferring to a cooling rack.
