Ingredients

  • 5 1/3 cups bread flour
  • 1 cup heavy cream
  • cup honey
  • 3 tablespoons nonfat dry milk powder
  • 2 tablespoons active dry yeast
  • 2 tablespoons kosher salt
  • 3 large eggs
  • ½ stick unsalted butter
  • 1 spray nonstick vegetable oil
  • to taste flaky sea salt

Instructions

  1. Cook ⅓ cup of flour and 1 cup of water in a saucepan until a thick paste forms.
  2. Add the cream and honey to the paste, whisking until dissolved.
  3. Transfer the mixture to a stand mixer and add the milk powder, yeast, salt, eggs, and flour.
  4. Knead the dough until smooth, then incorporate the butter gradually.
  5. Let the dough rise in a greased bowl until doubled in size, about 1 hour.
  6. Divide the dough into 6 pieces, then each piece into 3 smaller pieces.
  7. Place the smaller pieces in a greased muffin pan and let rise again until doubled.
  8. Preheat the oven to 375°F (190°C) and brush the top with egg wash.
  9. Bake until golden brown, about 25 to 35 minutes, then cool slightly before serving.
