Instructions
- Season the chicken thighs with sea salt and pepper, rubbing the seasoning into the meat.
- Preheat the pan to medium heat and add 3 tablespoons of butter. Cook the chicken thighs on both sides for 4 minutes until browned, then set aside and remove excess liquid from the pan.
- Add the remaining 1 tablespoon of butter, minced garlic, and crushed red pepper to the pan and stir for 2 minutes.
- Add chicken stock, heavy whipping cream, parmesan cheese, and ground thyme, cooking until blended and simmering.
- Stir in sun-dried tomatoes and red cayenne pepper, cooking for a few minutes.
- Add fresh spinach and cook until wilted, about 2 minutes.
- Return the chicken thighs to the pan (skin side up) and remove from heat.
- Transfer the pan to a preheated oven at 400°F for 20 minutes. Remove from oven, allow to cool, then serve.
