Sicilian Chicken and Spinach Saute

Ingredients

The chicken

  • 5 pieces Bone-In, Skin-On Chicken Thighs

The sauce

  • 1 cup Chicken Stock
  • ½ cup Heavy Whipping Cream
  • ½ cup Sun-Dried Tomatoes
  • 8 oz Fresh Leaf Spinach
  • cup Parmesan Grated Cheese
  • 3 tbsp Minced Garlic
  • 1 tsp Crushed Red Pepper
  • 1 tsp Ground Thyme
  • ¼ tsp Himalayan Sea Salt
  • ¼ tsp Black Pepper
  • Dash Red Cayenne Pepper
  • 4 tbsp Butter

Instructions

  1. Season the chicken thighs with sea salt and pepper, rubbing the seasoning into the meat.
  2. Preheat the pan to medium heat and add 3 tablespoons of butter. Cook the chicken thighs on both sides for 4 minutes until browned, then set aside and remove excess liquid from the pan.
  3. Add the remaining 1 tablespoon of butter, minced garlic, and crushed red pepper to the pan and stir for 2 minutes.
  4. Add chicken stock, heavy whipping cream, parmesan cheese, and ground thyme, cooking until blended and simmering.
  5. Stir in sun-dried tomatoes and red cayenne pepper, cooking for a few minutes.
  6. Add fresh spinach and cook until wilted, about 2 minutes.
  7. Return the chicken thighs to the pan (skin side up) and remove from heat.
  8. Transfer the pan to a preheated oven at 400°F for 20 minutes. Remove from oven, allow to cool, then serve.
