Ingredients

The chicken

  • 2 pieces bone-in, skin-on chicken breasts

The seasoning

  • 2 tablespoons butter, at room temperature
  • 2-3 teaspoons extra-virgin olive oil
  • 3-4 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

Instructions

  1. Preheat the oven to 450°F and line a baking sheet with aluminum foil.
  2. Trim any extra fat from the chicken breasts and work half of the butter under the skin of each breast.
  3. Drizzle each chicken breast with half of the olive oil and pat it to cover evenly.
  4. Season each breast with half of the kosher salt and black pepper.
  5. Bake in the oven for 50-60 minutes until the internal temperature reaches 165-170°F and juices run clear.
  6. Let the chicken rest for 5-10 minutes before slicing.
