Ingredients

The chicken

  • 4 pieces boneless skinless chicken breasts

The seasoning

  • ½ tsp garlic powder
  • ½ tsp dried thyme
  • ¼ tsp onion powder
  • ¼ tsp dried oregano
  • ½ tsp paprika
  • ¼ tsp chili powder
  • to taste tsp salt
  • to taste tsp black pepper

The oil

  • 2 Tbsp olive oil

Optional garnish

  • 1 Tbsp minced fresh parsley

Instructions

  1. Preheat the oven to 425°F and spray a 13 by 9-inch baking dish with non-stick cooking spray.
  2. Pound the thicker parts of the chicken to achieve an even thickness.
  3. In a small bowl, whisk together the garlic powder, thyme, onion powder, oregano, paprika, chili powder, salt, and pepper.
  4. Place the chicken in the baking dish and brush both sides with olive oil.
  5. Evenly sprinkle the spice mixture over both sides of the chicken.
  6. Bake in the preheated oven until the chicken's center registers 165°F, about 16 to 20 minutes.
  7. Let the chicken rest for 5 minutes before slicing and serving. Garnish with parsley if desired.
