Ingredients

  • cup blanched almond flour
  • teaspoon celtic sea salt
  • teaspoon baking soda
  • 1 cup freshly grated cheddar cheese
  • 1 tablespoon olive oil
  • 1 large egg

Instructions

  1. Combine almond flour, salt, baking soda, and cheese in a food processor.
  2. Pulse in olive oil and egg until well combined.
  3. Divide the dough into 2 pieces.
  4. Roll one piece of dough between 2 sheets of parchment paper to ¼-inch thick.
  5. Cut out shapes using a goldfish cookie cutter and transfer to a parchment-lined baking sheet.
  6. Roll leftover dough and refrigerate; repeat with the second piece of dough.
  7. Bake at 350°F for 13-15 minutes.
  8. Serve.
