Ingredients

  • cup blanched almond flour
  • teaspoon celtic sea salt
  • teaspoon baking soda
  • 1 cup freshly grated cheddar cheese
  • 1 tablespoon olive oil
  • 1 large egg

Instructions

  1. Combine almond flour, salt, baking soda, and cheese in a food processor.
  2. Pulse in olive oil and egg until well mixed.
  3. Divide the dough into two pieces.
  4. Roll one piece of dough between two sheets of parchment paper to ¼-inch thickness.
  5. Remove the top layer of parchment paper and cut out shapes using a goldfish cookie cutter.
  6. Transfer the cutouts to a parchment-lined baking sheet.
  7. Roll out the leftover dough and refrigerate; repeat with the second piece of dough.
  8. Bake at 350°F for 13-15 minutes.
  9. Serve the crackers.
