Instructions
- Puree the cooked beet with water until smooth, adding more water if necessary.
- In a bowl, mix cacao powder, coconut sugar, chia seeds, coffee, salt, cinnamon, ginger, and cayenne.
- Heat the milk in a pot until steaming, then whisk in the dry mixture and beet puree.
- Stir in vanilla and blend the hot chocolate if desired for a smoother texture.
- Heat a skillet and toast the brioche slices in coconut oil until golden.
- Drizzle the toasted brioche with honey and caramelize it in the skillet.
- Serve the hot chocolate in mugs with the warm caramelized brioche.
