Ingredients

The hot chocolate

  • 1 medium cooked red beet
  • 4 tablespoons cacao powder
  • 2-3 tablespoons coconut sugar
  • 4 teaspoons maca powder (optional)
  • 2 teaspoons chia seeds
  • ΒΌ cup fresh brewed coffee (optional)
  • pinch flaky sea salt
  • pinch cinnamon
  • pinch ground ginger (optional)
  • pinch cayenne (optional)
  • 3 cups milk of choice
  • 1 teaspoon vanilla
  • to taste coconut whipped cream or whipped cream for topping

The brioche

  • 1 tablespoon coconut oil
  • 2 slices thick cut brioche bread
  • 2 tablespoons honey
  • to taste flaky sea salt

Instructions

  1. Puree the cooked beet with water until smooth, adding more water if necessary.
  2. In a bowl, mix cacao powder, coconut sugar, chia seeds, coffee, salt, cinnamon, ginger, and cayenne.
  3. Heat the milk in a pot until steaming, then whisk in the dry mixture and beet puree.
  4. Stir in vanilla and blend the hot chocolate if desired for a smoother texture.
  5. Heat a skillet and toast the brioche slices in coconut oil until golden.
  6. Drizzle the toasted brioche with honey and caramelize it in the skillet.
  7. Serve the hot chocolate in mugs with the warm caramelized brioche.
