Ingredients

Fresh Beets

  • 1 beet medium, peeled
  • 1 ½ cups almond milk, unsweetened
  • 1 tablespoon maple syrup or honey
  • a pinch cinnamon
  • a pinch cardamom
  • if desired cocoa powder

Packaged Beets

  • 1 beet medium to large
  • 1 ½ cups almond milk, unsweetened
  • 1 tablespoon maple syrup or honey
  • a pinch cinnamon
  • a pinch cardamom
  • if desired cocoa powder

Powdered Beets

  • 1 ½ tablespoons dehydrated beet powder
  • 1 ½ cups almond milk, unsweetened
  • 1 tablespoon maple syrup or honey
  • a pinch cinnamon
  • a pinch cardamom
  • if desired cocoa powder

Beet Juice

  • ¼ shot beet juice
  • 1 ¼ cups almond milk, unsweetened
  • 1 tablespoon maple syrup or honey
  • a pinch cinnamon
  • a pinch cardamom
  • if desired cocoa powder

Instructions

  1. Preheat the oven to 400ºF and wrap a fresh beet in foil, roasting it for 40-50 minutes until tender.
  2. Blend all ingredients except for ½ cup of almond milk until smooth.
  3. Heat the blended mixture in a pot until boiling, then strain to remove chunks.
  4. Foam the remaining almond milk using a blender or handheld foamer.
  5. Pour the beet mixture into mugs and top with foamed milk, adding any desired spices or cocoa powder.
  6. For packaged beets, blend all ingredients until smooth, heat, strain, and serve similarly.
  7. For powdered beets, combine dry ingredients, steam or warm milk, whisk together, and serve with foamed milk.
  8. For beet juice, simply combine the juice with steamed milk and stir.
