Instructions
- Preheat the oven to 400ºF and wrap a fresh beet in foil, roasting it for 40-50 minutes until tender.
- Blend all ingredients except for ½ cup of almond milk until smooth.
- Heat the blended mixture in a pot until boiling, then strain to remove chunks.
- Foam the remaining almond milk using a blender or handheld foamer.
- Pour the beet mixture into mugs and top with foamed milk, adding any desired spices or cocoa powder.
- For packaged beets, blend all ingredients until smooth, heat, strain, and serve similarly.
- For powdered beets, combine dry ingredients, steam or warm milk, whisk together, and serve with foamed milk.
- For beet juice, simply combine the juice with steamed milk and stir.
