Beet Smoothie

pomegranate seeds or berries (blueberries, blackberries, raspberries, or strawberries)

plant-based milk, plain, unsweetened

flax seeds, ground

pure maple syrup (optional)
Instructions
- Chop the beet greens coarsely and add them to a blender.
- Scrub the beet root, quarter it (do not peel), and add it to the blender.
- Add the pomegranate seeds or berries to the blender.
- Pour in the plant-based milk, ground flax seeds, and maple syrup into the blender.
- Blend on high until very smooth, about 2-3 minutes.
- Pour into 2 glasses and enjoy.
