Ingredients

The Slaw

  • ½ head cabbage, sliced thin
  • 1 medium onion, sliced thin
  • 1 medium jalapeno, seeded and diced
  • ¼ cup cilantro
  • 2 tablespoons lime juice
  • 2 tablespoons extra virgin olive oil or avocado oil
  • 1 teaspoon maple syrup
  • ¼ teaspoon cayenne pepper

The Meat

  • 2 tablespoons apple cider vinegar
  • 2 tablespoons avocado oil
  • 1 teaspoon minced garlic
  • 1 tablespoon smoked paprika
  • 1 tablespoon ground cumin
  • 1 pound ground beef

For Serving

  • 12 pieces corn tortillas
  • to taste queso fresco (optional)
  • to taste avocado cream

Instructions

  1. Prepare the taco slaw dressing by whisking together cilantro, lime juice, oil, maple syrup, and cayenne pepper in a small bowl. Season with salt and pepper.
  2. In a large bowl, combine cabbage, onion, and jalapeno. Drizzle with the dressing and toss to combine.
  3. In another small bowl, whisk together vinegar, avocado oil, paprika, and cumin. Season with salt and pepper.
  4. Brown the ground beef in a skillet over medium-high heat, breaking it up as it cooks. Drain excess grease and stir in the spice mixture, cooking for an additional 3 to 5 minutes.
  5. Heat the tortillas in a dry skillet until warm.
  6. Assemble the tacos by adding beef to the tortillas and topping with slaw, queso fresco, and avocado cream.
