Ingredients

The mixture

  • ½ cup pumpkin seeds (shell on)
  • ½ cup sunflower seeds
  • 1 cup cashews

The flavoring

  • 1 tsp vanilla extract
  • 3 tbsp maple syrup
  • to taste sea salt

Instructions

  1. Preheat the oven to 300°F and line a sheet pan with parchment paper.
  2. In a medium bowl, mix together the pumpkin seeds, sunflower seeds, and cashews.
  3. In a small bowl, combine the maple syrup and vanilla extract.
  4. Pour the syrup mixture over the nuts and seeds, stirring to coat evenly.
  5. Dollop spoonfuls of the mixture onto the prepared sheet pan.
  6. Roast in the oven for 15-20 minutes, watching closely to avoid burning.
  7. Once browned, remove from the oven and sprinkle with sea salt.
  8. Allow to cool slightly before pressing clusters together to hold shape.
  9. Store in an airtight container at room temperature.
