Instructions
- Preheat the oven to 300°F and line a sheet pan with parchment paper.
- In a medium bowl, mix together the pumpkin seeds, sunflower seeds, and cashews.
- In a small bowl, combine the maple syrup and vanilla extract.
- Pour the syrup mixture over the nuts and seeds, stirring to coat evenly.
- Dollop spoonfuls of the mixture onto the prepared sheet pan.
- Roast in the oven for 15-20 minutes, watching closely to avoid burning.
- Once browned, remove from the oven and sprinkle with sea salt.
- Allow to cool slightly before pressing clusters together to hold shape.
- Store in an airtight container at room temperature.
