Maple-Roasted Pumpkin Seeds

Ingredients

The seeds

  • 1 cup pumpkin seeds (raw with shell on)

The seasoning

  • 1 teaspoon olive oil
  • 2–3 tablespoons real maple syrup
  • ½–1 teaspoon smoked paprika
  • ½ teaspoon cumin
  • ¼ teaspoon cinnamon
  • ½ teaspoon salt
  • 1–2 tablespoons sesame seeds
  • a pinch Aleppo chili flakes or cayenne pepper

Instructions

  1. Preheat the oven to 375°F.
  2. Soak the pumpkin seeds in water and massage them to remove the pulp.
  3. Scoop out the seeds and pat them dry.
  4. Spread the seeds on a parchment-lined sheet pan and drizzle with olive oil, maple syrup, spices, and sesame seeds.
  5. Bake on the middle rack, stirring every 5 minutes, and watch closely to prevent burning.
  6. Remove from the oven, fluff them, and let them cool for about 20 minutes until crispy.
