Instructions
- Preheat the oven to 375°F.
- Soak the pumpkin seeds in water and massage them to remove the pulp.
- Scoop out the seeds and pat them dry.
- Spread the seeds on a parchment-lined sheet pan and drizzle with olive oil, maple syrup, spices, and sesame seeds.
- Bake on the middle rack, stirring every 5 minutes, and watch closely to prevent burning.
- Remove from the oven, fluff them, and let them cool for about 20 minutes until crispy.
