The coating

  • 2 tsp maple syrup
  • 1 tsp vanilla

The spices

  • ½ tsp cinnamon
  • ¼ tsp ginger
  • ¼ tsp nutmeg
  • ¼ tsp salt

Instructions

  1. Preheat the oven to 350°F and bring a pot of water to boil.
  2. Remove seeds from a pumpkin and rinse them.
  3. Simmer the seeds in boiling water for 10 minutes.
  4. Drain the seeds and dry them with a cloth.
  5. Mix maple syrup and vanilla, then coat the seeds.
  6. Combine the spices and pour them over the seeds, mixing well.
  7. Spread the seeds in a single layer on a roasting pan and bake for 15-20 minutes, stirring every five minutes.
  8. Once crispy, remove from the oven and let cool before storing.
