Black Sesame Otsu

Ingredients

The sesame paste

  • 1 teaspoon pine nuts
  • 1 teaspoon sunflower seeds
  • ½ cup black sesame seeds
  • tablespoons natural cane sugar
  • tablespoons shoyu, tamari, or soy sauce
  • teaspoons mirin
  • scant 1 tablespoon toasted sesame oil
  • 2 tablespoons brown rice vinegar
  • teaspoon cayenne pepper
  • to taste pinch fine-grain sea salt

The main dish

  • 12 ounces soba noodles
  • 12 ounces extra-firm tofu
  • to taste as needed extra-virgin olive oil
  • 1 bunch green onions, thinly sliced

Instructions

  1. Toast the pine nuts and sunflower seeds until golden, then add sesame seeds and toast briefly.
  2. Crush the toasted mixture until it resembles black sand, then mix in sugar, shoyu, mirin, sesame oil, vinegar, and cayenne pepper.
  3. Bring a pot of salted water to a boil, add soba noodles, and cook until tender, then drain and rinse.
  4. Prepare the tofu by draining, patting dry, cutting into matchstick shapes, seasoning, and cooking in a skillet until browned.
  5. Reserve some sesame paste, thin the rest with hot noodle water, and combine with soba and half the green onions.
  6. Add the cooked tofu, toss gently, and serve topped with reserved sesame paste and remaining green onions.
