Instructions
- Toast the pine nuts and sunflower seeds until golden, then add sesame seeds and toast briefly.
- Crush the toasted mixture until it resembles black sand, then mix in sugar, shoyu, mirin, sesame oil, vinegar, and cayenne pepper.
- Bring a pot of salted water to a boil, add soba noodles, and cook until tender, then drain and rinse.
- Prepare the tofu by draining, patting dry, cutting into matchstick shapes, seasoning, and cooking in a skillet until browned.
- Reserve some sesame paste, thin the rest with hot noodle water, and combine with soba and half the green onions.
- Add the cooked tofu, toss gently, and serve topped with reserved sesame paste and remaining green onions.
