Penne Pasta with Easy Marinara

Ingredients

The sauce

  • 1 28-ounce can whole peeled San Marzano tomatoes, with purée
  • ¼ cup extra-virgin olive oil
  • 4 cloves garlic, peeled and smashed
  • 1 tablespoon tomato paste
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 sprigs fresh basil or oregano

The pasta

  • 1 pound dried penne pasta

Instructions

  1. 1. Boil a large pot of water and season it with kosher salt.
  2. 2. Crush the canned tomatoes in a bowl and set aside.
  3. 3. In a cold skillet, add olive oil and garlic, then heat to medium until fragrant.
  4. 4. Stir in the tomato paste and cook for 1-2 minutes.
  5. 5. Add the crushed tomatoes to the skillet along with salt, pepper, and basil, and bring to a boil.
  6. 6. Reduce heat and simmer for 30 minutes, stirring occasionally.
  7. 7. Cook the pasta until 2 minutes shy of the package instructions, then transfer directly to the sauce.
  8. 8. Toss the pasta in the sauce and add pasta water if needed.
  9. 9. Garnish with fresh basil and serve.
