Homemade Marinara Sauce
Ingredients
The sauce

whole peeled San Marzano tomatoes, with purée

extra-virgin olive oil

garlic, peeled and smashed

tomato paste

kosher salt

freshly ground black pepper

fresh basil or oregano
The pasta

pound
dried penne pasta or other favorite pasta
Instructions
- 1. Boil a large pot of water and season it with kosher salt.
- 2. Crush the tomatoes in a bowl and set aside.
- 3. In a skillet, heat olive oil and add the smashed garlic; cook until fragrant.
- 4. Stir in the tomato paste and cook for 1-2 minutes.
- 5. Add the crushed tomatoes, salt, pepper, and basil; bring to a boil.
- 6. Reduce heat and simmer for 30 minutes, stirring occasionally.
- 7. Cook the pasta until 2 minutes shy of the package instructions, then transfer it directly to the sauce.
- 8. Toss the pasta with the sauce, adding pasta water if needed, and serve with fresh basil.
