Ingredients

The sauce

  • 1 28-ounce can whole peeled San Marzano tomatoes, with purée
  • ¼ cup extra-virgin olive oil
  • 4 cloves garlic, peeled and smashed
  • 1 tablespoon tomato paste
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 sprigs fresh basil or oregano

The pasta

  • 1 pound dried penne pasta or other favorite pasta

Instructions

  1. 1. Boil a large pot of water and season it with kosher salt.
  2. 2. Crush the tomatoes in a bowl and set aside.
  3. 3. In a skillet, heat olive oil and add the smashed garlic; cook until fragrant.
  4. 4. Stir in the tomato paste and cook for 1-2 minutes.
  5. 5. Add the crushed tomatoes, salt, pepper, and basil; bring to a boil.
  6. 6. Reduce heat and simmer for 30 minutes, stirring occasionally.
  7. 7. Cook the pasta until 2 minutes shy of the package instructions, then transfer it directly to the sauce.
  8. 8. Toss the pasta with the sauce, adding pasta water if needed, and serve with fresh basil.
