Smoky Bacon Chili

Ingredients

The chili base

  • 2 tablespoons olive oil
  • 1 lb ground beef
  • 1 lb ground Italian sausage
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 packet Hunt's Recipe Ready Tomato Paste (2 tablespoons)
  • 1 8 oz can Hunt's Tomato Sauce
  • 3 15 oz cans Hunt's Diced Tomatoes
  • 3 15 oz cans small red beans or kidney beans, rinsed and drained
  • 8 strips cooked bacon, chopped
  • cup tamed jalapeno slices, drained
  • 1 tablespoon plus 1 teaspoon chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons smoked paprika
  • 2 tablespoons pure maple syrup
  • to taste salt and black pepper

Optional toppings

  • shredded cheese
  • sour cream
  • green onion
  • jalapeno slices

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef and sausage, cooking until browned for about 8 to 10 minutes.
  3. Remove meat and place on paper towels to drain.
  4. In the same pot, add onion, red bell pepper, and garlic, cooking until softened for about 5 minutes.
  5. Stir in tomato paste, tomato sauce, diced tomatoes, beans, bacon, and jalapeno slices.
  6. Add the cooked beef and sausage back into the pot.
  7. Season with chili powder, cumin, smoked paprika, maple syrup, salt, and pepper.
  8. Let the chili simmer on low for 30 minutes until thickened.
  9. Serve warm with desired toppings.
