Ingredients

The base

  • 6 pieces bacon, diced
  • 4 cloves garlic, minced
  • 1 unit onion, diced
  • 2 unit poblano peppers, diced
  • 1 lb ground beef
  • 28 oz canned diced tomatoes
  • 15 oz canned pinto beans
  • 15 oz canned kidney beans
  • 1 cup beef broth

Chili seasoning

  • 1 tbsp chili powder
  • 1 tbsp coconut sugar
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp sea salt
  • ½ tsp chipotle powder
  • ½ tsp ground pepper

Optional toppings

  • to taste unit shredded cheese
  • to taste unit sour cream
  • to taste unit diced onions

Instructions

  1. Dice the bacon and cook it in a dutch oven over medium heat until browned.
  2. While the bacon cooks, prepare the garlic, onion, and peppers.
  3. Add the garlic, onion, peppers, and ground beef to the pot, breaking up the beef and cooking until browned.
  4. Make the chili seasoning by mixing the spices in a small bowl.
  5. Once the beef is browned, stir in the chili seasoning.
  6. Add the canned tomatoes, pinto beans, kidney beans, and beef broth to the pot and stir well.
  7. Bring the chili to a boil, then reduce the heat and cover to simmer for 2 hours, stirring occasionally.
  8. Serve in bowls and add optional toppings as desired.
