Easy Rum-Soaked Grilled Pineapple

Instructions
- Mix the rum, brown sugar, and cinnamon in a small bowl.
- Place the pineapple rings in a baking dish and pour the rum mixture over them, tossing to coat. Let soak for at least 15 minutes.
- Strain the excess rum sauce into a saucepan and simmer until reduced by half.
- Heat a grill pan or sauté pan over medium-high heat and lightly grease it.
- Grill the pineapple rings for 1-2 minutes per side until browned.
- Transfer the grilled pineapple to serving plates, top with ice cream, and drizzle with the reduced rum sauce.
