Rum Glazed Pineapple

The pineapple

pineapple, cored and cut into about 1 inch or 6-8 rings

ice cream (coconut or vanilla)
Instructions
- Combine brown sugar, rum, nutmeg, and cinnamon in a small bowl.
- Place pineapple rings in a glass pan and pour the mixture over them, allowing them to marinate for 15-20 minutes.
- Remove pineapple from the marinade and drain it, then pour the marinade into a small saucepan and simmer until reduced by half, about 6-8 minutes.
- Heat a grill pan or skillet over medium-high heat and grill the pineapple for 2-3 minutes per side until heated through and grill marks appear.
- Transfer grilled pineapple to a serving plate, top with ice cream, and drizzle with the reduced sauce.
