Rum Glazed Pineapple

Ingredients

The glaze

  • ½ cup dark rum
  • ½ cup water or more rum
  • 1 cup packed brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp nutmeg

The pineapple

  • 1 whole pineapple, cored and cut into about 1 inch or 6-8 rings

For serving

  • to taste ice cream (coconut or vanilla)

Instructions

  1. Combine brown sugar, rum, nutmeg, and cinnamon in a small bowl.
  2. Place pineapple rings in a glass pan and pour the mixture over them, allowing them to marinate for 15-20 minutes.
  3. Remove pineapple from the marinade and drain it, then pour the marinade into a small saucepan and simmer until reduced by half, about 6-8 minutes.
  4. Heat a grill pan or skillet over medium-high heat and grill the pineapple for 2-3 minutes per side until heated through and grill marks appear.
  5. Transfer grilled pineapple to a serving plate, top with ice cream, and drizzle with the reduced sauce.
